Pour cette recette, il faut choisir une vari\u00e9t\u00e9 \u00e0 chair ferme comme :\n<ul>\n<li>la Monalisa riche en amidon,<\/li>\n<li>la Nicola toujours fondante,<\/li>\n<li>la Roseval facilement reconnaissable,<\/li>\n<li>la traditionnelle belle de Fontenay, une tr\u00e8s ancienne vari\u00e9t\u00e9<\/li>\n<li>ou encore la Charlotte.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li>&#8211; 100 g de beurre<\/li>\n<li>&#8211; 5 g. d&rsquo;ail<\/li>\n<li>&#8211; 3 dl de cr\u00e8me<\/li>\n<li>&#8211; 1 litre de lait<\/li>\n<li>&#8211; Sel, poivre<\/li>\n<li>&#8211; Muscade (facultatif).<\/li>\n<li>Aromates : 1 feuille laurier, 1 branche de thym.<\/li>\n<li>100g de gruy\u00e8re rapp\u00e9.<\/li>\n<\/ul>\n<h3>Recette :<\/h3>\n<ul>\n<li>\u00c9plucher les pommes de terre, les laver, les \u00e9mincer (rondelles assez fines), ne pas les passer sous l&rsquo;eau apr\u00e8s les avoir coup\u00e9es (l&rsquo;amidon s&rsquo;\u00e9liminerait et le gratin manquerait de liaison).<\/li>\n<li>&#8211; Faire bouillir le lait avec ail, sel, poivre, aromates et muscade . En fin de cuisson retirer les aromates.<\/li>\n<li>&#8211; Jeter les pommes de terre \u00e9minc\u00e9es dans ce lait assaisonn\u00e9 bouillant, laisser cuire une dizaine de minutes (attention cette pr\u00e9paration \u00e0 tendance \u00e0 \u201c attacher \u201d).<\/li>\n<li>&#8211; Mettre dans un plat \u00e0 gratin beurr\u00e9, verser la cr\u00e8me dessus, disposer le beurre en petites parcelles , saupoudrez le gruy\u00e8re et mettre \u00e0 four doux (thermostat 6 \/ 150\u00b0) pendant 45 minutes \u00e0 1 heure.
