Trop froid : beurre trop dur \/ trop chaud c&rsquo;est liquide =&gt; avec cela pas besoin d&rsquo;attendre 48:00 =&gt; on travaille tout \u00e0 la suite.<\/p>\n<p>Le SECRET 2 =&gt; BIEN fariner le plan de travail (sinon sa colle, la race de sa m\u00e8re &#8230;) =&gt; pr\u00e9voir une balayette : quand on repli, il y a un max de farine =&gt; pour \u00e9viter de rajouter de la farine \u00e0 la pr\u00e9paration (sinon cela devient trop dur) &#8230; on la balaie.<\/p>\n<ul>\n<li>\u00a0Pour =&gt; 700 g de p\u00e2te<\/li>\n<li>400g = 300 + 100 de farine<\/li>\n<li>150g d&rsquo;eau<\/li>\n<li>5 g de Sel fin<\/li>\n<li>300g de beurre doux<\/li>\n<\/ul>\n<p>D\u00e9trempe : La p\u00e2te 100% farine<\/p>\n<ul>\n<li>300 g Farine + eau + sel<\/li>\n<\/ul>\n<p>Tourage : 100% beurre<\/p>\n<ul>\n<li>beurre + 100g farine<\/li>\n<li>Bien malaxer t0ut cela<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>=&gt; rouler les 2 p\u00e2tons en boudin =&gt; un court et gros pour le tourage + 1\u00a0 deux fois plus long (et plus fin pour la d\u00e9trempe)<\/li>\n<li>=&gt; Plus facile a \u00e9taler en Bande de m\u00eame largeur. le beurre doit \u00eatre long du 1\/2 de la d\u00e9trempe.<\/li>\n<li>1er tour : D\u00e9trempe sur la table, le tourage au milieu pos\u00e9 dessus. Normalement 1\/4 de d\u00e9trempe de chaque cot\u00e9. On repli, les oreilles de d\u00e9trempe de chaque cot\u00e9 sur le dessus du tourage. On pli en deux selon l&rsquo;axe de la jointure du milieu.<\/li>\n<li>On \u00e9tale \u00e0 1 gros centim\u00e8tre d&rsquo;\u00e9paisseur. On repli 1\/4 en bas + 1\/4 en haut en laissant un doigt d&rsquo;espace entre les 2 rabats (sinon \u00e7a pli mal). On repli en 2 selon l&rsquo;axe de jointure au milieu. On fait faire 1\/4 de tour au p\u00e2ton (et on marque 1 trait qq part, faut les compter et on perd vite le fil) et on repart &#8230;. pour un tout.
