c&rsquo;est vous qui voyez)<\/li>\n<li>350g d&rsquo;eau (du robinet \u00e7a fait l&rsquo;affaire, ou de source &#8230; c&rsquo;est vous qui voyez)<\/li>\n<li>500g de farine (la standard T55 ou un peu moins raffin\u00e9e &#8230; c&rsquo;est vous qui voyez)<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de Levure s\u00e8che\u00a0 (ou 1\/2 cube de fraiche &#8230;. c&rsquo;est vous qui voyez), j&rsquo;utilise la s\u00e8che qui peut se garder plusieurs mois.<\/li>\n<li>\u00a0 1 cuill\u00e8re \u00e0 soupe d&rsquo;huile d&rsquo;olive (ou d&rsquo;autre chose &#8230;.c&rsquo;est vous qui voyez)<\/li>\n<li>1 gla\u00e7on d&rsquo;eau<\/li>\n<\/ul>\n<\/li>\n<li>Proc\u00e9dure :\n<ul>\n<li>LA VEILLE :\n<ul>\n<li>Sur la balance de m\u00e9nage poser le saladier et faite la tare.<\/li>\n<li>Ajouter 350g d&rsquo;eau<\/li>\n<li>Ajouter une cuill\u00e8re \u00e0 caf\u00e9 bien pleine de sel<\/li>\n<li>D\u00e9layer et faites la tare<\/li>\n<li>Ajouter 500g de farine<\/li>\n<li>Ajouter sur le pourtour une cuill\u00e8re \u00e0 soupe d&rsquo;huile d&rsquo;olive (je mets un filet autour, au pif, depuis la bouteille)<\/li>\n<li>Ajouter une cuill\u00e8re \u00e0 caf\u00e9 de levure (chez : <a href=\"https:\/\/www.cuisineaddict.com\/\">https:\/\/www.cuisineaddict.com\/<\/a> les seuls qui m&rsquo;en ont vendu quand il n&rsquo;y en avait plus nulle part, Big Up !) Instant-Saf de chez LESSAFRE<\/li>\n<li>M\u00e9langer \u00e0 la spatule &#8230;. ou utiliser le batteur avec les crochets (c&rsquo;est vous qui voyez. Moi je suis feignant et des \u00ab\u00a0p&rsquo;tits gars biens\u00a0\u00bb, se sont donn\u00e9s du mal pour faire de beaux batteurs \u00e9lectrico -\u00e9colo). Vous obtenez un truc mou, collant qui fait penser au Slim.<\/li>\n<li>Couvrir d&rsquo;un film (ou d&rsquo;un sac en plastique, c&rsquo;est vous qui voyez)<\/li>\n<li>Mettre au frigo pendant toute la nuit. La p\u00e2te va lever doucement et longtemps.<\/li>\n<\/ul>\n<\/li>\n<li>Le JOUR J :\n<ul>\n<li>Fariner g\u00e9n\u00e9reusement le plan de travail.<\/li>\n<li>Sortir le saladier et le pencher sur le cot\u00e9. La p\u00e2te commence \u00e0 couler mais adh\u00e8re fortement au fond<\/li>\n<li>Avec une spatule souple d\u00e9tacher progressivement les adh\u00e9rences pour lib\u00e9rer la p\u00e2te, jusqu\u2019\u00e0 sa chute sur le plan farin\u00e9.<\/li>\n<li>NE PAS MALAXER ! La p\u00e2te est lev\u00e9e et il ne faut pas la casser. On la traite gentiment et en douceur.<\/li>\n<li>fariner le tas de p\u00e2te et le plier en 3 (Portefeuille) pour en faire un truc plus \u00ab\u00a0boulesque\u00a0\u00bb. Rabattre les cot\u00e9s vers le dessous pour former le p\u00e2ton.<\/li>\n<li>Fariner la casserole et placer le p\u00e2ton de dedans.<a href=\"http:\/\/www.blue-bears.com\/blog\/wp-content\/uploads\/2021\/04\/IMG_1477.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4625 alignright\" src=\"http:\/\/www.blue-bears.com\/blog\/wp-content\/uploads\/2021\/04\/IMG_1477-150x150.jpg\" alt=\"\" width=\"219\" height=\"219\" \/><\/a><\/li>\n<li>Scarifier et laisser lever 1 heure \u00e0 temp\u00e9rature ambiante.<\/li>\n<li>1\/2 heure avant la fin de la lev\u00e9e mettre la cocotte sur le feu (A fond !!)<\/li>\n<li>J&rsquo;ai un d\u00e9bit de gaz pas terrible alors j&rsquo;atteins p\u00e9niblement les 260\u00b0 \u00e0 vide !! (T\u00b0 normale du four de boulanger 270\/280\u00b0 pour le pain) et 220\u00b0 en cuisson.<\/li>\n<li>Au moment ou la lev\u00e9e est termin\u00e9e placer RAPIDEMENT la casserole au centre de la cocotte et placer le gla\u00e7on dans la cocotte en dehors de la casserole. La vapeur donne la couleur dor\u00e9e mais jeter de l&rsquo;eau (m\u00eame un peu) sur fond en fonte \u00e0 260\u00b0 n&rsquo;est pas une bonne id\u00e9e (j&rsquo;ai test\u00e9!). Le gla\u00e7on deviendra de l&rsquo;eau apr\u00e8s que vous ayez remis le couvercle.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.blue-bears.com\/blog\/wp-content\/uploads\/2021\/04\/IMG_1479.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-4633 aligncenter\" src=\"http:\/\/www.blue-bears.com\/blog\/wp-content\/uploads\/2021\/04\/IMG_1479-150x150.jpg\" alt=\"\" width=\"244\" height=\"244\" \/><\/a><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>Laisser cuire 1:00 (\u00e0 210\u00b0) ou 45 minutes si 270\u00b0<\/li>\n<li>D\u00e9mouler et laisser refroidir sur une GRILLE. Le pain perds encore beaucoup d&rsquo;eau au refroidissement et sans la possibilit\u00e9 de l&rsquo;\u00e9vacuer, le fond du pain sera plein de flotte.<\/li>\n<li>Prochaines modif =&gt; mettre 4 \u00e9crous en acier\u00a0 au fond de la cocotte et poser la casserole dessus pour \u00e9viter un contact direct fond cocotte \/ fond casserole.
